what i’ve been munching on

Hello there. This post coming from the biggest procrastinator ever.

I should and need to be studying, but honestly, I just flat out don’t want to. Oh motivation, where did you go.

Considering the class I am in is Microbiology, you would think I would know better and actually put more effort in, but it’s just one night right, I still have tomorrow. We’re going to go with that.

And I mean it is What I Ate Wednesday and all, and I know you guys are just dying to see what I have been munching on lately.

As per usual my  meals have been a bit repetitive.
Starting with breakfast.

I also made a pretty delish whipped cottage cheese with Fitmixer chocolate protein.

Again with the avalanche of cinnamon. Never too much cinnamon if you ask me.

Since I have really started to focus on building lean muscle, I have been a little snack monster lately. I swear I am always hungry.

But I keep telling myself this is a good thing. I am building muscle, and my body needs more fuel, which equals food. And since I am still in my gaining process, this is extra good for me.

I hope you all had a fabulous week. Having Monday off definitely made my week go by quicker which was kind of nice. Yes, more was crammed in at school, but this week it didn’t seem to be so bad.

A lot happened this week as well, and surprisingly I’m handing it all pretty well.

Let me explain a little bit. I don’t like to get too personal on here, especially when the news is not so great, but the point of this blog yes, is to share my tasty eats, but it’s also an outlet for me.

We found out Tuesday that Matt is being reduced to part time at his job. This came as a huge shock to us for multiple reasons I won’t get into, and as terrible as it is for him, I couldn’t help but freak out about our money situation.

As most of you know, I am currently in school and not working. When I made the decision to go back to school, our financial situation was one huge concern. Again, as most of you know, I have an eating disorder and am in therapy for it. School. Therapy. Not working. Do we see the financial problem? But with Matt working, we somehow made it all work. Now that Matt has had his hours cut in half, well, you can see where the concern comes in.

But we are trying to stay positive, he is of course looking for other employment, and I am sure like all the other bumps in the road, we will make it over this one as well.

(Anyone need any graphic design work 😉 )

So actually on his last full time day instead of coming home and being grouch butts, I actually suggested going out to dinner “one last time” (because let’s be honest, dinners out will not be happening anytime soon) But I wanted to celebrate not the negative situation, but the positives that can come from it. I truly believe in the saying when one door closes, another door opens.

It’s all about making the best of your situation and staying positive

It was actually kind of nice having him home. Because that meant he can take over on some of the dinner cooking.

Like today when I got home from school, dinner was already in the crock pot. I didn’t have to do anything! What a nice change.

On the menu? Matt made chili.

Now, as good as chili as Matt makes, I couldn’t decide if it was better than the batch I made.

Because they’re not just any chips.

I recently won a giveaway and won these tasty chips and I am so glad I did.

I have never heard of Falafel Chips, but they sounded amazing from the beginning. These were the spicy flavor and they seriously had such a kick to them! Matt and I both were surprised at how good they were. And more than half the bag may already be gone. Woops.

I’m taking a break from studying because well I promised you an amazing cookie recipe, and a girl has to have priorities right. Posting about delicious cookies > studying. I think so anyways.

But first, the star of the show.

I had mentioned in my last post, that these were kind of an accident. I of course found a recipe, took it as a starter, and kind of threw random things in. Something that typically isn’t a smart thing to do when baking, but it seemed to work this time.

So some measurements might be an estimate or best guess to what actually went in.

Chai Oatmeal Raisin White Chocolate Cookies

(yup I know it’s a mouthful)

Ingredients

– 1 cup butter

– 1/2 cup granulated sugar

– 1/3 cup honey (original recipe calls for 1/2c dark brown sugar & 1/3c white sugar, but I couldn’t find my brown sugar, so I used all natural clover honey instead)

– 2 large eggs

– 1-1/2 cups four

– 3-1/2 cups old fashioned oats

– 1 tsp baking soda

-1/2 tsp salt

– 1 tbsp vanilla

– 1/2 tbsp cinnamon

– 1 tsp ginger

-1 tsp cloves

– 1/2 cup raisins

– 1/2 cup white chocolate chips

– 1 chai tea bag

– 2 cups boiling water

Directions:

– Let chai tea steep in boiling water for 5 minutes. Discard teabag. Let raisins seep in chai tea for 15 minutes, then drain.

– In a large bowl, cream together butter, sugar and honey for about 3 minutes. Beat in eggs and vanilla.

– In a medium bowl, combine flour, baking soda, salt, and spices. Add flour mixture to sugar mixture.  Stir in oats, raisins and white chocolate chips.

– Preheat oven to 350°F. Line two baking sheets with parchment paper. Drop dough in rounded tablespoons onto baking sheet. Bake until golden brown, 10-12 minutes.

These delicious babies were the result. And oh my gosh were they delicious.

When they came out of the oven they smelled amazing, but smells can be deceiving.

Matt and I took bites at the same time.

And both had the same reaction.

“Oh my gosh these are great!”

I made these specifically for my Foodie Pen Pal (I probably just ruined the surprise for her) and sent off some extras to Matt’s work.

He said his co-workers played the “what’s in this?” game.

But they loved them too!

Put that protein #goop on top of a P28 bagel and talk about protein-palooza. Who needs cream cheese?

marvelous in the small things

I may fall asleep as I type this, but there are certain things that I always love to be a part of.

My life is so busy, a bit stressful, and always a little crazy, but this gives me the opportunity to focus on the goods things that have happened in the past week. As small as they may be, because really, it is the small things that make life worth it.

No it’s not my birthday, but I definitely benefited from a class mates birthday. These are raspberry chocolates dipped in more chocolate, drizzled with more chocolate. The most amazing thing I have eaten in awhile. Ah-mazing.

I love Mrs. Dash seasonings, but sometimes I don’t want to pay for them. Yes,  I am cheap. Super cheap. Not ashamed, we’re on a budget.

I am happy to report I survived yet another class. Although barely! Oh my goodness my final was a killer. It kind of ruined my grade, but I am just so happy to be done with class for two weeks! (btw when I say ruined, I still got an A in the class, but not high enough for academic excellence. Yes I am an over-achiever.)

So first off wanted to acknowledge some good news for two people who I have truly grown  to admire and respect as bloggers and as individuals.

The beautiful Katie at Healthy Diva Eats and the lovely Courtney at Sweet Tooth Sweet Life are both expecting!!

I couldn’t be happier for both of them and Katie is already a fabulous mom, so I know she will do amazing with the new one on the way and Courtney who is a first time mommy, well I have all the faith in her. They both are such caring individuals that there is no way they won’t be amazing parents to their new bundles of joy. So congrats to both of you!

I actually apologize for the horrible picture of my puppy chow. I will admit, when I made my first batch of it, along with the chocolate covered Oreo’s, there was a disaster in my kitchen. I could not get the white chocolate to melt, burnt a batch, spilled half a bag of powdered sugar and dropped about half the puppy chow all over the counter. I was a mess.

Matt actually wasn’t home but when he did, I demanded he try everything and ensure me I wasn’t a total failure. He gladly took the job of taste tester and made me feel so much better. Oh the silly things us girls get upset over.

My second batch I am happy to report came out much better. I googled how to melt the white chocolate (who would have known white chocolate is so finicky) and used milk chocolate for my second batch of puppy chow.

Success.

So I love the holidays, I love baking for the holidays, but goodness having this many sweets around is dangerous!

And it doesn’t help that my class mates have been spoiling me on top of the goodies I’ve made, oh and all the cookies and chocolates Matt’s parents sent us too.

Ok, so let’s be honest. It is the holiday’s and I have a new view on life and food in that it is ok to indulge when you want. So many people boast “I don’t give in” “I can say no” “I have self control” I have learned that those are in fact eating disordered thoughts, and you’re fooling yourself if you think you are just being healthy. Yes, don’t over-do it. It does not mean eat a whole bag of chocolates in one sitting. But one or two pieces? Or one cupcake? I never heard of one cupcake killing someone. So I have been enjoying all the goodies that are coming my way. And for once in a very long time, without guilt, without remorse, without “I need to exercise to work this off”. I never need to earn my food. Food is food. And indulging and enjoying once in a while will not make me gain weight overnight. Sorry, it’s just physically impossible.

Ok enough ranting.

I am off to go do.

Nothing.

I am going to sit on my butt, not worry about having to study and probably have a few glasses of wine. And some more cookies. And maybe a piece of chocolate.

Of course I am going to partake in the lovely Katie’s Marvelous In My Monday, but let me tell you guys something, this Monday is an extra special Monday.

I bet you’re expecting me to say it’s extra special because it’s my first Monday of my audit class and I get to relax. I mean, if you read my last post you know how crazy excited I was for Pharmacology to be over.

But no friends, this Monday is extra special for another reason.

I got a call early this morning that my sister is going to have her baby today!!

I am going to be an aunt!

And I can not tell you how excited I am!

This of course makes me wish I was there, but I am going to visit in a few weeks, so now I am extra excited. Ah. I can’t contain myself.

And as per usual on my Marvelous In My Monday posts is recap on my weekends. I mentioned we visited Matt’s parents on Saturday, which was so nice, but Sunday was nice and relaxing as well.

First off, let me get this off my chest.

Pharmacology is over!

And guess what. Not to toot my own horn -toot toot- but I passed the class with a 94%!!

I am incredibly proud of myself, not only because I got an A is one of the hardest classes, but I got an A in one of the most hardest classes!

I can not explain how incredibly relieved I am for this class to be over and for me have done so well.

Going in to the final I wanted to get a good breakfast in. And boy did I get a tasty one in.

One of the most delicious powercakes I have made to date! And one of the prettiest I might add.

It was a special day, I deserved a special breakfast.

It was my typical powercake mix topped with fresh banana, strawberries, peanut butter and chocolate drizzle.

Ah-mazing.

A great way to start my day let me tell you.

One of the bad things about my classes is even on the last day of class we have to stay for the whole class. Which means my teacher waits until the end of the class for us to take our final. Do you know how hard it is to sit through nonsense all day when all you want to do is take your final and be done. The teacher gave us some “study time” which is so pointless because the whole class basically sits there talking about how nervous we all are about the final.

I took the time to fuel up some more brain power.

The topper to my day was our teacher had calculated all of our grades up to the final and how many points we needed to get on the final to pass the class. I guess a lot of people were at risk for failing, so she wanted to give everyone a heads up on what they needed.  Good and bad idea if you ask me. That could put a lot more pressure on people. I went up there and do you know how many points I needed to pass the class. Zero. Yup, I could have not taken the final and still passed the class. Yay for me, really made me just want to go home.  Not that I could ever really do that, it was nice to know though and it took a bit of pressure off. I of course still wanted to do well. You know over-achiever me.

Final over. Ready to celebrate. And I did. I have some amazing classmates and celebrated this with gorgeous creation.

It tasted as amazing as it looks. S’mores cupcake. Oh.em.gee it was amazing. And totally worth it.

I deserved it right?

My next class is a general class, which I don’t even have to take, so I’m basically going to a class that doesn’t count, but let me tell you, I am so excited to be able to relax and not worry for a whole month. So excited.

We went to visit Matt’s parents Saturday and it was so nice to not have to bring my text book and have nothing to prep for.

Matt’s mom is still recovering from her GI upsets (she had to have another surgery) so it was so nice to see her feeling better.

We even went out to lunch to watch the Colt’s game.

Oh little mountain town bars. I love them.

(I didn’t take a picture, but I ordered a grilled chicken salad, that for a small little bar was amazing. Loaded!)
