snacks i’m loving

Hello my loves.

I hope you all have had a wonderful weekend. It’s so hard for me to concept a weekend anymore since I work every Saturday, my weekends fly by a lot quicker when I only have one day to really relax.  And not that I don’t miss him, but Matt was at a design conference all weekend, so I actually had some quiet time to myself. But I’m not going to lie, it can get a little boring.

I probably should have worked on more wedding things, as I feel like it is quickly creeping up on me, and I still have so much to do, but I took the quiet time to actually just relax and chill out. I try to keep my stress levels low, but when you finish addressing all your save the dates only to notice at the very end that there was a typo on the date and the wrong year was printed… kind of hard not to freak out a bit.

It doesn’t help that on top of it all Matt and I have both been sick for the past few days, so I haven’t had much motivation or energy to do more than lay on the couch in my spare moments.

But I did of course want to check in with you lovelies and share a few goodies.

Since I’ve been sick, my appetite has of course been a bit off. I find myself snacking a lot more as I don’t have as big of a hunger for big meals.  But I’ve never had problems with being a snacker and thankfully I have had some tasty treats showing up at the house.

When I know I need to get some energy in me and don’t have the appetite for a huge meal, nuts are always a go to for me.

They provide raw organic nuts and seeds and they come in some really interesting flavors.  Not only do I think the fact that their products are organic are great, but the fact that they are raw and unprocessed  I think is amazing.  They explain that this keeps more nutrients and enzymes in the nuts, making them better for you. I was most blown away by the Tahitian Vanilla Coco Creme Walnuts, as I love walnuts to begin with, but the exotic vanilla flavor was amazing. I ate these straight from the bag, but also topped my yogurt and ice cream with them. Such a nice sweet crunch.

The Vegan Cheezy Almonds were another favorite and these were a great addition to my salads.  Again a nice added crunch.

I recently reviewed the new Quest Nutrition protein chips and I am still loving those.

Perfect little protein snack and I highly recommend if you have any left over guacamole from Chipotle like I did, they go amazing together.

I am so excited to try these new KIND granola bars. I am a huge fan of their other bars and granola, so I’m pretty sure I will be a fan of these as well!

I also received another surprise on my door step recently.  I have worked with Enjoy Life Foods in the past in reviewing some of their products and honestly I have never been disappointed in what they make. I recently made my very first chocolate chip pumpkin bread using their dairy free mini chips ( keep an eye out for a recipe), that when this surprise package arrived I was more than excited.

sweet and savory [two recipes]

Hello my loves!

I hope everyone is having a great week. I come to you today with some fun new recipes. Yes I said recipes. I know I have been slacking in that department lately, but my cooking lately has basically been throwing random things together and calling it breakfast, lunch and dinner.

But with that being said I am trying to create new and different things. Basically because I was getting bored with my same ole meals I had been having. Yes I am a creature of ruts and convenience, but this girl needs some variety!

So I have a a little sweet and a little savory to share.

First the sweet! A new breakfast for me.

Nothing too new and nothing too fancy, but those are the best sometimes.

Banana Protein Pancake

I see protein pancakes all over Instagram and always want to make them, but honestly, I have never been a huge pancake person.

I mean don’t get me wrong, the impressive pancakes stacks people post get me drooling.

I finally decided to cave in and started with a pretty simple pancake recipe.

Ingredients

(serves 1)

– 1/2 banana (mashed)

– 1/2 scoop vanilla protein powder (I used Growing Naturals Pea Protein – Vanilla Blast)

– 1 tbsp coconut flour

– 1/3 cup liquid egg whites

– 1 tsp ground flax seed

– 1/2 tsp baking powder

– cinnamon and vanilla stevia to taste

Directions:

– Blend all ingredients together – allow batter to sit for a few minutes

– Cook on heated skillet over medium heat for approximately 2 minutes per side

– Top with desired toppings

I topped mine with a lemon spiked greek yogurt, trail mix and coconut chips.

I loved the banana in this pancake and since I love the Growing Naturals pea protein so much, the combination was pretty much meant to be in my opinion. Am I a pancake convert? Jury is still out, but this was definitely a nice switch up!

Next up is the savory.

Since I have nixed the sandwiches for lunch I have been having a lot more salads. Salads can be boring, but they don’t have to be!

I made this delish little combination to help me get some protein into my salads and also add some more flavor!

This can be used as a side dish, a dip for chips or a topping for a salad!

Balsamic Black Bean Salad

Ingredients

– 1 can drained and rinsed black beans (can use kidney, garbanzo, pinto or a combination)

– 1/2 red onion – diced

– 1 red/yellow/green pepper – diced

– 2 cloves garlic – minced

– 4-5 cherry tomatoes – chopped

– 1 handful cilantro

– 1/2 cup balsamic vinegar

– 1/2 tsp chili powder

– 1/2 tsp paprika

– Optional red chili flakes

– salt and pepper to taste

Directions

– Prep first 5 ingredients and combine in a large bowl.

– Whisk together remaining ingredients to make marinade and pour over bean mixture

– Serve immediately or store in fridge to allow flavors to blend and marinate.

Can be served warm or chilled.

I tend to think that these types of dishes taste better after allowing the flavors to marinate, the longer the better!

As mentioned I used this on top of my salads, it’s a great way to not only add protein to the salad, but I also didn’t need to use any dressing due to all the flavor in the bean salad.

It also makes an amazing chip dip as well!

This black bean salad really has endless uses, Matt also used it on top of nachos one night! With that being said it would be a great taco or burrito filling! Or really a spoonful straight from the container works too!

I loved the slight spiciness of this salad and it gave me the idea to make a sweeter version of it by adding fruit…

So be on the look out for more fun creations and variations.

Coconut Covered Peanut Butter Banana Sushi

Simple ingredients, but a nutrition packed snack.
And who doesn’t love eating with chopsticks?

Ingredients

– 1 banana

– 1 -2 tbsp peanut butter (or nut butter of your choice)

– 1 -2 tbsp shredded coconut

♥ ♥ ♥

Directions

– Smear a thin layer of peanut butter on peeled banana.

– Spread shredded coconut on a plate and roll banana in coconut until evenly coated.

– Cut into slices

Eating with chopstick is optional, but highly recommended!

I know the idea of banana sushi isn’t really a new one. I’ve seen others wrap their banana in a tortilla, which I think could be fun because you could potentially add more fillings, I also saw one where they actually fried the banana’s to make it more of a tempura style. That could be fun too.

Definitely something to play around with!

Oh happy Wednesday my loves and happy Thanksgiving Eve!!

I don’t know about you, but I am so excited for a day full of good food, family and a day off work!

Mostly the family, but being the foodie I am, I’m not going to lie I am pretty excited about all the food!

One thing that I’m kind of worried about though is my stomach is still not completely back to normal after last’s weeks sickness.

It just goes up and down with being upset to being fine, but as long as I’m not throwing up, I can work with it.

With that being said meals have still been pretty bland and boring, but thanks to my amazing clients, I have some deliciousness to share with you still.

Let me just tell you. We have been spoiled at my clinic.

 

It started off when my co-worker made not one but two home made pies.

Apple pie and pecan pie.

I have never had pecan pie, but she raved about hers being the best, so I of course had to be the judge.

Let me tell you, I am a pecan pie convert. It was ah-mazing.

Then all the gifts from the clients started piling in.

Friends, this happened in just one day.

We have a client who brings us fresh fruit every week for boarding his dogs, it just so happened on that day we also got two boxes on See’s Chocolates, chocolate donuts, and an edible arrangement.

The chocolate arrived first and around our clinic, it’s never too early for chocolate.
So this happened.

I somehow restrained myself and only had one piece, which is a good thing considering how much more was to come.

This edible arrangement didn’t stand a chance.

Especially the chocolate covered fruit.

I immediately took a piece of the chocolate covered pineapple and thought I had died and gone to heaven. But really anything covered in chocolate is good in my book.

Which is why a chocolate covered apple was soon plucked off. Chocolate doesn’t last long in our clinic so I had to cease the opportunity.

After I put myself in a chocolate/fruit coma, I needed something to wash it all down.

Thankfully another amazing client came to visit.

I love Starbucks passion fruit tea as is, but when it’s free, it’s just that much better.

I swear I felt like I was going to explode that day, but it was all worth it.

It’s the holidays,  I’m going to take advantage of it.

If you read my last post you know things have been kind of crazy around here due to the pup being sick.

With that being said, I wish I had a day full of delish eats to share with you, but unfortunately meals have been pretty low key and thrown together.

I can’t even use the pup as an excuse, because honestly sometimes that’s just my life.

But before I bore you with my lack of effort meals and excuses I have to say even though life has been a little bit crazy lately, my fiance still manages to be simply amazing and out shine me.

What am I talking about?

Well it was our 8 year anniversary and guess who dropped the ball and forgot. He did. This girl.

With the pup being sick, me working like a mad woman, I totally spaced it. But what did I come home to?

Seriously I am one lucky lady. Matt is amazing, but honestly, sometimes he’s not the most romantic. This meant more to me than any “fancy” gift he could have gotten me.

I was all smiles.

But enough mushy stuff. On to food!

Even though my meals have been blah blah boring, there have been a few high points with some tasty new to me products that have helped me through this crazy busy time.  There have also been some foods that may not have been the best choices, but that’s life sometimes too.

I actually got this CoCo Cafe a few months ago from a foodie pen pal and it sat in my pantry for quite some time.

Um. Shame on me. This is amazing. I’m not even a huge coconut water fan, however I am a huge coffee fan. And luckily for me this taste more coffee than coconut. It was awesome. I loved it. I will be buying more of these in the future.

I’ve also been a snack monster lately. I do not know why, but my hunger has been out of control lately.

I’m learning to embrace that, honor my body and hunger and eat when it asks for food.

I got the opportunity to try the new Enjoy Life Chewy Bars and even though I’d have to say the Coco Loco is my favorite so far, this SunButter Crunch is pretty tasty as well.

I also found an amazing find at Sprouts while shopping the other day that has satisfied my snack monster.

I love peanuts. I love nori. What a great combination.

And a classic snack that never disappoints is anything by Chobani.

I got lucky/unlucky when they had that huge recall, in the sense that I had purchased a few bad products and had to throw them away.  But since the company is amazing, I received free replacement coupons in the mail and finally decided to cash in on them.

I seriously think I stood in the grocery aisle for about 15 minutes trying to decide which flavor of the Chobani Bites I wanted to try. They all sounded amazing. But since I pretty much love anything chocolate mint I thought this was a good choice. It was pretty tasty, and made a great late night snack. I definitely want to try some of the other flavors!

I also finally found more than one flavor of the flips!

This was a great flavor decision. Peach + Pistachio I’m pretty much convinced now are a match made in heaven.

Oh McDonald’s. It has been so long since I had a breakfast sandwich, but a client brought a bunch of them in for us. That’s about all I could eat because as tasty as it was (guilty – I actually like their breakfast sandwiches) my tummy did not agree.

Lesson learned I suppose.

My next indulgence however every little part of me agreed with.

So confession, this week my contribution isn’t all that strange. But it is something I want to share.

I’ve made chia jam before, but this time I stepped it up a notch.

One of our clients at my work always brings us an insane amount of fresh fruit in payment for us boarding his dogs for the day. It’s almost impossible for us to eat it all, so I always take a bunch home. This time I brought home blueberries, raspberries and blackberries, and since they tend to go bad kind of quickly, I decided to make a chia jam out of them.  But my secret twist?

Lemon Stevia and fresh ginger.

Mixed Berry Lemon Ginger Chia Jam

Ingredients:

– 1 cup blueberries

-1/2 cup raspberries

– 1/2 cup black berries

– 2 tbsp chia seeds

– 10+ drops liquid lemon stevia

– Approximately 1/2 tbsp freshly grated ginger (about 1 inch)

Directions:

– Blend all ingredients in a magic bullet or small food processor and lightly blend.

– Place in a jar and refrigerate to allow chia seeds to absorb liquid.

This is great on top of Silver Hills Bakery Omega Flax.

Another #strangebutgood spread that I made that I was not planning on being so good, so appropriate pictures were not taken included more lemon stevia.

I am loving this stuff obviously.

Protein Lemon Curd

Ingredients

(serves 1)

– 1/2 cup cottage cheese

– 1/2 scoop vanilla casein (I use CytoSport)

– 5 drops liquid lemon stevia.

Directions

– Place in magic bullet or small blender (I actually use my coffee grinder) and whip cottage cheese.

I topped a rice cake (sprayed with coconut spray and sprinkled with cinnamon – new obsession) with healthy chocolate sauce (unsweetened cocoa+water+stevia) and the protein lemon curd. So simple, but so delicious.

Well I know you guys are super surprised that I gave you more dips and spreads, but hey, it’s what I’m good at!

what i’m loving lately

Truth be it, I have to work this Saturday, but our Saturday’s are only half days so it’s really not that bad.

Other than the whole getting up at 5:00am on a Saturday thing.

But I thought for a fun little weekend post, I would share some random things I am loving lately.

One of the first things I want to share with you guys is actually not a food item.

I do not follow any specific diet. I try to eat healthy most of the time, but as I stated in my 80/20 post, I will never deprive myself of something I am craving.  I believe in listening to your body, giving it real foods, and eating foods that work best for you.

With that being said however, I have become obsessed with the Balanced Bites podcast.

It’s hosted by Diane Sanfilippo who is a Certified Nutrition Consultant and Liz Wolfe who is a Certified Nutritional Therapy Practitioner.

What I love about them is yes, they follow a paleo diet, which I do not, but they have a balanced approach on foods and health and they acknowledge that you do not need to follow a strict diet 100%, but that it’s about fueling your body with real foods, and about finding what foods work best for you. And they also just have general good health information.

I highly suggest you check them out.

In listening to these podcasts (Balanced Bites and other health/fitness podcasts) it has really motivated me on my fitness activities as well.  I have basically cut cardio out of my exercise regimen and have really started to focus only on strength training. I’m sure there is tons of research fighting both sides on the battle, but for where I am right now, I just think that strength training, getting stronger, building lean muscle is more important and productive for me.

I am really loving HIIT and Tabata style routines right now, you can check out my Pinterest board for some of my favorites. The Purely Twins also just wrote a post about the benefits of HIIT training, and they also provide some informative links on the topic. It’s definitely a post worth checking out.

With that being said, I have also been focusing on making sure I fuel my body appropriately and I’ve been dabbling with some supplements as well. (I’m kind of borderline on supplements, I believe that you should and could get all of your nutritional needs from food, but I also like to experiment and at least give something a chance and see if it works for me personally)

We all know I am obsessed with protein powders, I love baking with it and have been putting protein frosting on basically everything and anything. With my little protein powder obsession, I have researched quite a few companies to find the best products.

I had seen a few other people  using MRM products, and after checking out their website there were some products that really intrigued me.

I was lucky enough to get to try some of them!

I have never used Egg White Protein, but have been real curious about it.  I think it will be real good to bake with. I also have never even seen or heard of a Flax-N-Whey protein powder, so that intrigued me as well. And I have heard great things about using BCAA’s pre- and post- work out, so I was very excited to try that.

So what do I think so far?

I have been  using my BCAA’s after my work outs. It’s suppose to help the body recover and promote lean muscle gain, so I’m curious to see if I notice a difference in my endurance and recovery as I continue to use it. I will keep you guys updated.

Next I used the egg white protein in one of my recent dessert creations (which I made by complete accident and it was amazing. Funny how accidents in the kitchen are usually the most delicious)

Ok, I know it’s not much to look at, kind of like mush, but it was delish.

I basically added a bunch of powders and flours (of course not measured), some pumpkin and almond milk and had intentions of making a protein mug cake, but after tasting the batter I decided just to pop it on the freezer for about 10 minutes and ate it raw and cold.

I can’t help it, I like almost everything better cold.

On to the Flax-N-Whey protein powder.

It makes a pretty tasty protein plantain bread topping.

It’s not as thick as some of my protein powders (plant based powders are great for protein frosting as they mix a lot thicker – Plant Fusion is by far my favorite for making my frosting) but the vanilla nut flavor was really tasty!

I really wish I had gotten some of their casein as I love to add that to my late night snacks and again since its more thicker, I think it would have been great to bake with. But I am very happy so far with the products I received.

Another foodie find that I am loving lately are Fruit Bliss all natural no sugar added dried fruit.

I actually won these in a giveaway and have been loving them. I typically am not a fan of dried fruit, but to call these dried fruit is actually kind of a stretch. They are re-hydrated with water and are extremely juicy. And pretty much amazing.

They aren’t much to look at, but since I have been out of fresh fruit lately, I started adding them to my protein breakfast wraps. The figs are pretty amazing just plain, but even better when there is melty peanut butter involved.

And just one more shameless plug of a product I am loving. This one is worth mentioning not only because I was surprised at how much I loved it, but it not only is super delicious, but it provides wonderful health benefits as well.

I have been wanting to start taking fish oil again, but hate the gel capsules. To the internet I went and when I came across Barleans Organic Oils, I was intrigued to say the least.

They offer more than just fish oils, but their oils come in pretty amazing flavors.

The Essential Woman mix  is one of my favorites, not only because it had a great combination of essential oils, but the flavor is chocolate mint. Pretty much my favorite flavor of anything.

I have been adding this to basically everything. And honestly, I have been eating it straight out of the bottle. If you’re looking to add any oils into your diet, I highly suggest checking out what they have to offer.

One of the truffles was eaten as I was going through the rest of the box. I couldn’t help it. However, the lovely Arizona heat had melted them a bit, so I made quite a mess, but don’t worry, I licked the wrapper clean.
It was still very tasty, melted and all, but really, when it chocolate not good?
Overall, this package had a great variety of items for me to try and I am excited to incorporate them all into some meals, so thank you Kati very much!!
