sad goodbye [but delicious] dinner

Happy Wednesday my loves!

This week my schedule was switched up at work and I actually got Tuesday and Wednesday off.

Um. I like it.

It’s nice having two random days off where I can relax and get stuff done around the house while Matt is at work.

It worked out extra good this week, because we are pup sitting for a friend while she is out of town.

So on the topic of my friend being out of town, she is the one I have to thank for this What I Ate Wednesday’s amazing-ness.

My friend Kelli broke the sad news to me that she is moving to North Carolina. It is something I kind of knew was coming because we had talked about her wanting to leave and wanting to go more back east and closer to home. (she was one of my college roommates in Indiana), but none the less I was still so sad when she told me she was leaving. But I am incredibly happy for her, I know it’s something she has been wanting to do, and thankfully everything seems to be falling into place with her, and she already has a new job.

Things are moving fast, and she is actually moving next week, so a congratulations/goodbye dinner was definitely in order.

We decided to go to Fajitas’, which is a restaurant that her and I always seemed to meet at. I actually don’t think I have been there since the last time I met her there when her family was in town over a year ago.

I haven’t seen Kelli in a few months, so I was so excited to see her, but also super sad that she is leaving me!

As soon as the food arrived there were plenty of happy faces though!

Fajitas’ is obviously known for their fajita’s. They are amazing!

The show stealer though is their home made tortillas.. They are freshly made to order in house and more thicker than your typical flour tortilla. It seriously makes the dish.

Another spot light is their grilled zucchini. Amazing.

And really, what’s a mexican meal without guacamole. Love the stuff and I’m pretty sure I ate that whole ramekin.

No shame.

We left full and with tons of left overs.  We hung out for a little bit longer before heading home and thankfully since we have her pup I’ll get to see her one more time before she moves. I’m pretty sure I’m going to cry. I’m going to miss her so much! Good friends are hard to come by and she has defiantly been one.

On a lighter note, I also wanted to share with you guys a tasty snack I have been eating lately.
I almost always have to have a night time snack. I don’t like going to bed on an empty tummy, and full heartedly don’t fall for or believe that whole don’t eat before bed business.

I also always crave carbs, but seriously, when don’t I crave carbs. Lately my night time snack has included this gem that I discovered.

These Fiber Gourmet crackers are awesome. And let’s be real, peanut butter makes everything more awesome. Always. Especially Peanut Butter & Co. cinnamon raisin swirl. Love.

I also whipped up a protein lemon greek yogurt mix (Chobani plain greek yogurt, vanilla protein powder and lemon Stevia) that I topped with a local seed mix. Also pretty tasty and amazing.

Perfect night time snack.

Another amazing night time snack I made?

Obviously QuestBars have swept over blog land, so of course I had to jump on. First it was just eating the bars (like a normal person would), then the baking of QuestBars became the new thing (I must admit they are way better warmed up), but then things got crazy.

Well I tried… and failed miserably at it.

Then I saw an ice cream sandwich made out of a QuestBar.

Well we all know my obsession with protein frosting, so I had to give that one a try too.

I first thought about eating it plain and simple. Then a protein yogurt mix was added on top. Well if that wasn’t enough chocolate, I made my healthy chocolate sauce and drizzled that on as well.

Much better success with this one. Will be making this again.

The powders kind of reminded me of Carnation Instant Breakfasts and yes I could have just mixed them with milk like directed to make a shake, but we all know me and I don’t walk down the beaten path. I of course had to be a little bit more creative.

Wanna guess what was one of the first things I tried with it?

You guessed it.

Protein Frosting.

Since I am still on the Protein Plantain Pizza kick (and don’t plan getting off it any time soon) I decided to use the chocolate as one of my toppings. It mixes quite well and didn’t need much liquid to make the frosting, a huge plus in my book.

So since the chocolate worked so well, I decided I needed a little pink in my morning.

What? Another Protein Plantain Pizza? Yes. But the frosting stole the show.

Not only was this actually quite tasty, but seriously, I love anything pink.

I had to experiment more with the shakes and I am known for adding protein powder to almost…well almost everything.

The next thing I added the Extend shake too was my night time snack.

♥ ♥ ♥

Strawberry Greek yogurt with a healthy chocolate drizzle.

I took 1/2 packet of the strawberry Extend nutritional shake and mixed it in with plain Chobani Greek yogurt.  I spread the yogurt mix over a Wasa Multi Grain Crispbread and I then made my healthy chocolate sauce (unsweetened cocoa+almond milk+stevia) and drizzled it on top.

Oh my was this delish. Chocolate strawberry goodness. I do believe this combination will happen again.

And then we all know my love for overnight prOATs. So what did I decide to add to a recent bowl?

You guessed it, the Extend nutritional shake.
I used the vanilla and in addition to vanilla nut extract and a sprinkle down pour of cinnamon I had a delicious bowl of oats waiting for me for breakfast.

Topped with the traditional frozen banana, granola sprinkle and some raisins for good measure.

Since these shakes could be used as a meal replacement,  and even though I didn’t use a full serving, it was amazing how much more filling this bowl of oats was.

I plan on experimenting more with the shakes, I’m curious to how it would do in baking.

I’m going to start off by saying I am totally taking advantage of my few days of time off before I start my externship, and I thought what a better way to use my time is to actually be more active on my blog and participate in more happenings that are going on in the blog land.

But if you remember my obsession with my soy chocolate panini, it’s not hard to see why I love this sandwich so much.

This one is kind of a multiple of ideas, but since I seemed to have went through a pumpkin obsession (I still might be in it) and spreads/dips are kind of my thing, here is my recipe for homemade Pumpkin Peanut Butter and the multiple ways I use pumpkin.

getting snacky with fiber gourmet

We all know I like to snack.

♥ ♥ ♥

Being in school I am also always looking for healthy snacks to take on the go. Sometimes my lunches remind me of when I was a kid and my mom still packed my lunch. I don’t know about you, but I got your cookie cutter brown bag lunch. A sandwich of some sort, chips/crackers/cookies and if I was lucky maybe a piece of fruit. But I’m going to be honest, I think that piece of “fruit” was usually a fruit roll up or fruit snacks. I wasn’t the healthiest of an eater back in the day, but you know what, I was a kid and let’s be real that’s what kids eat.

Growing up, I kind of miss those lunches, but I now know that a lot of those items are not the best nutritionally. And the older we get, the better we need to care for our bodies. (I’m not promoting feeding children loads of processed foods, I really think we need to be more proactive in providing our children with healthy food choices, but it is what I ate growing up, and I’m not dead so I really don’t think an Oreo here and there will kill anyone.)

But back to today and my life now. Growing up on things like Cheez-Its and Wheat Thins, they hold a special place in my heart. So what’s a more health conscious girl to do when she gets a craving for that little orange square?

Well, Fiber Gourmet came to my rescue.

Fiber Gourmet takes these classic crackers, but offers a lower calorie, higher fiber option.

Being the huge snacker I am, I knew I had to try these!!

They not only offer crackers, but also offer pasta as well.

I of course had to try the crackers.

Since those little cheese squares hold such a special place in my heart I broke into the plain cheese flavor first.

I’m going to be completely honest, one thing I love about the original Cheez-It is the salt. Yea, I’m a a salt girl. These were actually not salty, and lightly baked, which to all you salt avoiders is a huge thumbs up. I did love that they were so light and airy. A great alternative to the original cracker.

Next I tried the Nacho flavor for an on the go snack for school.

Ok guys, seriously. These were amazing. I mean, I know it’s just a cracker, and it’s just nacho flavoring, but I am a spicy cracker type of girl and these satisfied both of those cravings. So I highly recommend this flavor. (no really go buy a box right now)

Lastly I tried the Wheat Thinables. I’m not going to lie, I was the most excited for these because I love Wheat Thins, I will be honest in saying I was a bit disappointed in these.

The crackers were extremely dry. But I solved that problem by dipping them in one of my dessert hummus creations. Nothing that stuff can’t fix.

Overall I like the options Fiber Gourmet gives in term of a healthier cracker. Extra fiber is always a good thing especially if you are trying to curve a hungry growling stomach in the middle of class.

I’ve also become a bit obsessed baking and cooking with protein powders.

It’s a win-win for me in terms of I can get vanilla or chocolate flavors and added protein at the same time.

Pumped Up Pumpkin

It looks like a simple little pumpkin bowl, which is kind of is, but with a little protein punch.

Here is a guess-timate of what I put into it.

Serves 1

2-3 tbsp pumpkin puree

1 tbsp Plant Fusion chocolate protein powder

5-7 drops NuNaturals Liquid Vanilla  (or sweetener of choice)

Depending on how chocolatey you want it, you could also throw in a few sprinkles of unsweetened cocoa.

I can’t decide if it being Wednesday has come quickly, or if the week is going by slow.

My week has already been so jam packed I’m happy the week is halfway through, but I also feel like Friday can’t come soon enough.

For starters this week at school has been intense.

I am in Microbiology and we are starting to learn all the bacteria.

Do you know how many bacteria there are? A lot. And it’s almost impossible to learn them all.

I sure am trying though.

I also have had an intense week in terms of my recovery.

Guys, I think I am finally making the weight gain plunge and have developed the mind set of “just do it” because honestly, that’s the what I have to do.

For anyone who has recovered from an eating disorder this is one of the hardest things to accept. You know what you need to do (gain weight),  you know you need to do it, yet it’s just so dang hard to do. Which is weird.

But let’s take a break from all the heaviness and take some time for fun, positive things.

Ironically the day I had planned to have my wonderful OIAJ, the inspirational Sarah posted an Instagram picture of her “chocolate cake” oats that were in the making.

I made my oatmeal/TVP chocolate cake prOATS (thanks to Plant Fusion chocolate, NuNaturals vanilla Stevia and a little vanilla and nut butter flavoring) and added them to my beautiful Wild Squirrel chocolate sunflower seed butter jar that was waiting for me.

So with a delicious, satisfying breakfast accomplished, it was on to the stressful school situation.
But I got a little help in that department too.
I have wonderful classmates who make it just a bit more enjoyable.

Ok, I know I have been eating a lot of cupcakes lately, and I almost passed this one up. But so glad I didn’t.
This seemingly simple chocolate cupcake was topped with the most amazing fresh raspberry frosting. It literally was amazing raspberry goodness in my mouth.
And every bite was delicious. (and guilt-free, win!)
So with that being said let me take a moment to acknowledge my new found success in the weight gaining department.
(Feel free to skip this part if you’re not interested in my eating disorder conversation. You won’t hurt my feelings. It’s not for everyone.)

For the past 6 months, I have been going up and down in the weight gain department. I would have a few weeks of really good progress and then I would just stall again. I know I need to gain weight. I want to gain weight. But when I actually pushed myself, made myself uncomfortable, I always questioned it with “will I be able to stop”. Well, I didn’t question it, my ED was just trying to scare me and stop me. And sometimes he won.
But great conversations with Matt, his help to push me to eat even when I wasn’t hungry and to eat foods that scared me, made me realize I need to do this. For me. For my health.
So our new motto was I was not gaining weight, I was getting healthy.
Amazing what changing that perspective can do for motivation and acceptance.
So I’ve accepted that I need to get healthy. And I think finally I am mentally able to accept that.
(with the help of my amazing fiance, nutritionist and therapist as great support)

Ok back to fun stuff.
Other meals sadly have been low key due to the craziness of school (however come back soon for the amazing crock pot recipe I have cooking as we speak!) but I have managed to sneak in a few tasty snacks.
First to celebrate Matt and I finally cracked open this bad boy.

We have had this brand in the Maple Bacon, which to me was a bit too maple and a bit too bacon. But if this one was going to be over powering on flavors I figured you couldn’t go wrong with chocolate, peanut butter or banana.
Surprisingly enough, this beer was an amazing blend and balance.
It tasted like a great deep brown ale, with just a hint of all the other flavors. Matt and I both loved it.

Another new to me drink that gets me through class is Zevia.
Well Zevia isn’t new to me, that is a long time obsession, but the Grape flavor was new to me.

Black Cherry will always hold the top spot in my heart, but I was pretty impressed with the Grape.

I also took the time cheer up my night time “dessert”.
Greek yogurt mixed with CytoSport Chocolate Casein with PB Thins as my little dunk-a-roos and then of course sprinkles to make it cute.
Because I love sprinkles. And they make everything better.

I mean it is Marvelous In My Monday time and all, so what a better time than to get to know each other again.

It’s been awhile. So let’s get re-acquainted!

1.  What did you eat for breakfast?

This one might be a shocker. I made myself a powercake. Looked kind of like this. I swear these never get old and my flavor combinations are endless.

2.  How much water do you drink a day?

This is something I am working on. I drink a decent amount of water in the morning, but other than with dinner that’s about it. I kind of got back on the diet pop kick, which I need to get off ASAP.

3.  What is your current favorite workout?

I am currently doing the Fitmixer Boot Camp, so those work outs have kind of taken over my routine. Something I found out that I thought would never happen, I love tabata work outs. I think my ADD has something to do with it, but on and off and changing what I’m doing frequently seems to work for me. Love it.

4.  How many calories do you eat a day?

Couldn’t tell you. I jumped off that calorie counting train and couldn’t be happier.  I now focus on eating balanced meals with my carbs/proteins/fats and it seems to be working for me. You want to talk about taking a load off, stop counting calories and just listen to your body.

5.  What are your favorite healthy snacks?

Greek yogurt and fruit, raw nuts, veggies and hummus and does nut butter straight from the jar count?

6.  What do you usually eat for lunch?

Sadly lunches are boring for me. Usually I am eating at school or on the go, so honestly, it’s a lot of pb&j, yogurt and a piece of fruit, usually a banana.

7.  What is your favorite body part to strength train?

My upper-body because I feel it is my weakest, but I love seeing the results I am getting. I’ll do a pull up yet, you just watch!

8.  What is your least favorite body part to strength train?

Um. I really don’t know. If anything I will say my abs, because they are a part that I feel I don’t see any results in. I know I know, abs are made in the kitchen. But the day I stop eating bread… well that will be the day. And it’s not going to happen anytime soon. This girl loves her carbs.

9.  What are your ‘bad’ food cravings?

I’m not going to answer this, because I think no food is “bad”. Food is food. None is good none is bad. I believe everything is fine in moderation. If I have greasy pizza one night, guess what, I probably won’t want it again tomorrow. (ok knowing me and pizza I probably will, but you get the point). I truly believe our bodies are smarter than we think, and they balance themselves out. So if I am craving ice cream, I’m going to have it. Same goes with pasta, cream sauces, bread, fried foods, pizza, all those foods society tells us will make us fat (and probably over night right?). It’s just not true.

10.  Do you take vitamins or supplements?

I take a few vitamins my nutritionist recommended. A multi-vitamin, vitamin B and calcium.

I also love cooking and baking with protein powder since I don’t eat a lot of meat. Do I really need it? Meh, probably not, but I guess it’s not hurting me right now.

11.  How often do you eat out?

Well, not often. And if you read my last post, probably even less often now.

Which is sad.

I’m really going to miss sushi.

12.  Do you eat fast food?

Very rarely. I feel like if I am going to spend money on out to eat food, I’m going to make it worth it and have it be something good.

13.  Who is your biggest supporter?

Well this one is a no brainer.

14.  Do you have a gym membership?

No and I really wish I did. Again. Stupid money. I did recently get a stability ball for Christmas, and we picked up a new dumb bell set. So my little “at home gym” is growing.

15.  How many hours of sleep do you get a night?

Oi. I’m such an old lady, I get plenty of sleep. I swear I’m in bed by 10:30pm each night. Granted I get up at 7am, but that’s still my recommended 8 hours. Go me!

16.  Do you have a ‘cheat’ day?

I don’t. And as I mentioned earlier, I don’t think you should have to. You’re not cheating. It’s all about moderation.

17.  Do you drink alcohol?

Yes, I do. I like beer. I like wine. #sorryimnotsorry

18.  Do you have a workout buddy?

Not really. But honestly, I like it that way. I’m competitive by nature and sometimes that’s good, but sometimes I like just being by  myself and motivating and pushing myself, not worrying about what someone else is lifting, how long someone else is running, or what exercises someone else is doing.

19.  What is the best thing that has changed about your life since committing to a Healthy Lifestyle?

I always thought I was being healthy, but recently realized I was always too focused on just one aspect about it. It’s not just diet. It’s not just exercise. It’s just about being overall healthy and finding the balance between the two. So yes, I like to eat healthy and put good foods in my body. And in terms of my fitness, I no longer focus on the cardio cardio cardio and just burning calories. I am more focused on strength and muscle building. I no longer was to lose, I want to gain.  Finding that balance has also brought me so much more mental health.

20.  What was the last healthy thing you did?

Having a positive attitude. So much has gone wrong in my life, and I am currently at yet another bump in my road, but you will still see me with a smile on my face and a positive attitude. Being mentally healthy I think is the most important and being grateful for what I have, not what I don’t have has really changed my outlook on life.

I have my health, my life, and people who love me. What else do I need?

veggie lentil stew

I’m crawling out from under my rock for a few moments to check in and let you all know I am still alive.


Not only do I think I’m catching this flu epidemic (although I caved in a got a flu shot – not that I’m against immunizations, but I have a pretty stellar immune system to where I don’t think its necessary) but I am also crazy drained from school already. So maybe it’s just a little combination, but this girl is pooped.


The Simply Bar helps learning about gross parasites a little bit easier. But only a little.

With that being said, I think you guys know the drill that when school takes over my life, food and everything else gets pretty boring.

However, we did have a pretty epic dinner around here the other night.

I seriously love the crock pot. It makes dinner so easy sometimes. I have about 500 crock pot recipes saved, so I finally decided to actually use one. Well, in all actuality, I got the idea from a recipe, but totally winged the rest. The other thing I love about crock pots, you can throw whatever you want and it usually comes out decent. This was no exception.

Veggie prep happened in the morning before school.


And the beginning to a delicious stew began.

Veggie Lentil Stew


– 2 cups lentils

– 1 onion – chopped

– 1 zucchini – chopped

– 1 yellow squash – chopped

– 2 carrots – chopped

– 1 red bell pepper – chopped

– 2-3 cloves garlic – chopped

– 1 15oz can diced tomatoes

– 1 1/2 cup vegetable broth

– 2 tbsp tomato paste

– 2 tsp cumin

– 1 tsp paprika

– dashes of salt and pepper to taste

(Note: As I said I basically just threw in what I had and wanted, feel free to add more/different veggies and spices to your taste)

– I literally threw everything in the crock pot, set to low for 6-8 hours and walked away.

This deliciousness was waiting for me when I got home.


 And it was pretty delicious!

Matt must have thought it was really good too, because he ate all the left overs in two days.

And if my night couldn’t be any more delicious, it ended with a craving.


Because sometimes you just have to have ice cream.
