Weekends are just too short, are they not?

Since I work Saturday’s, I really feel like I can never get anything done on my weekends. Because I am not going to lie, I am selfish and really just want to be lazy because I have such little time to actually be lazy. If that even makes sense.

However, by mid-day I am always itching to do something, it’s just not cleaning the house or being productive like I should be.

So instead non-productive things are done.

Like dinner and drinks at Whole Foods.

I also really like beer. We have visited our Whole Foods bar so often, we are now “regulars”. So much that I added one of our favorite servers on Instagram. Because I was a creeper and made sure she was in my beer shot photos.

I will say I was a bit productive on Sunday.  While Matt was still sleeping away I took the opportunity to experiment a bit in the kitchen with a new product I had received.

Have you guy’s heard of banana flour? Yea, I didn’t even know it existed. And with my obsession with banana’s, in finding out about this glorious product, I just had to try it.

Guys, be sure to check back because I made an ah-mazing pancake recipe with it.

lazy dinners and delish desserts

Hello my loves.

I hope everyone had a very relaxing weekend. This weeks work schedule has been kind of crazy for me lately and very draining. Usually I have a random day off in the week that breaks it up a little bit for me which I like, but these past two weeks I have been working so much more due to another employee quitting. It was a sudden thing, so we all are trying to fill in when we can, which leads to longer weeks with no breaks. Needless to say I am wiped and haven’t had the energy or desire to do much after work other than sit on my butt.  Which in writing that out, that is something I want to change. Yes, I work long hours, but that doesn’t mean I have to become a couch potato as soon as I get home.

Note to self: Work on that.

So I do apologize for being a bit absent.

Long days mean I have had no desire to cook.

The first night started out good and Matt actually had dinner waiting for me when I got home from work.

Grass fed hamburger topped with avocado. And what made this burger even better? We had Einsteins Bagels brought into work and I took a pretzel bagel home with me and let me tell you, that made the most amazing bun.


Then things started to go a little down hill. Well not really, but in terms of my lack of wanting to even go home to cook.

We ate at Whole Foods 3 days for dinner in a row.

I was actually craving sushi and Matt really wasn’t feeling our normal sushi spot, so we compromised on Whole Foods so I could get sushi and he could get something else. I also got a side of broccoli and brussel spouts. Whole Foods has the best roasted brussel sprouts.

I guess the sushi really hit the spot because I wanted it again the next day. Usually Matt try’s to talk some sense into me about how we don’t need to eat out two days in a row, save money blah blah blah, but he actually very quickly gave in. (probably because I offered to pay)

And even though I had just had it the night before, I wanted more sushi.

Had they not been out of what I had the night before, I probably would have gotten the same thing, but alas they didn’t have it this time, so I decided on a different type of roll. With you guessed it, more broccoli and brussel sprouts on the side.

Ok so you think we would be done with dinner’s at Whole Foods right?

Well Saturday after I got home from work we had an appointment to go look at a potential wedding location and it just so happens a Whole Foods is close by. We really only had the intentions of going in for a quick beer, but ended up getting dinner to-go.

I think I can say though that I’ve had my fill for a little bit.

We’ll see though.

And even though work is draining me, I really can’t complain too much.

On top of delicious dinners courtesy of Whole Foods, I must admit, I’ve had some pretty tasty desserts to end my nights.

I almost always have dessert, I like to go to bed on a full satisfied belly. And let me tell you, lately it has been extremely satisfied.

I had a free coupon for Halo Top Creamery Ice Cream, but hadn’t been able to find it. Well guess what Whole Foods had it, so I finally got to try it!

I had heard good things about the Lemon Cake flavor, so I decided to try that one first.

Guys. If you haven’t had this ice cream yet, you need to, and you need to get this flavor. It is seriously amazing. I don’t care if it’s low fat, or whatever, I could eat this whole pint in one sitting (don’t worry though…it lasted for two)

Since I loved the Lemon Cake so much I decided to try the Vanilla as well.

Doctored up a rice cake with home made chocolate sauce, vanilla Halo Top ice cream and a caramel drizzle.

Not too shabby.

But seriously. Lemon Cake. Go get it.

You can tell it’s getting hot in Arizona, because I am on a huge ice cream kick. And lucky for me I was able to try a new to me product that satisfies my ice cream craving.

Nada-Moo is a non dairy coconut milk ice cream and their flavors are to.die.for.

I had the ice cream delivered to my work as it is already 100 degrees here in good ole Arizona, and couldn’t wait to get home to try a flavor. The Banana’s for PB and Chocolate was calling my name and between my co-workers and I, I think we demolished at least half the pint in a mere 5 minutes.

Nada-Moo is gluten free, dairy free, egg free and sugar free product. And it taste amazing on top of that. I’m all about eating healthy, but I am not a fan of fake diet foods that have no nutrition, taste horrible and are made from questionable ingredients. Because even though a product may be low in calories and fat, that doesn’t make it healthy or good for your body.  Not a problem though when it comes to Nada-Moo.

Matt was a huge fan of this as well. He is pretty easy to please when it comes to ice cream, but the first time I gave him a bowl of it not telling him what it was his response was “what is this and where can we get more of it”.

Even though I have been indulging in at home desserts, I still have my craving for my frozen yogurt.

It’s always nice to switch things up, so I just run down the street and get my fix.

Do you ever look at the date or day of the week and think to yourself “where has time gone?” Because that’s how I feel right about now. Time is just flying.

My life has been busy and on top of that emotionally stressful lately. A lot of feelings I am trying to deal with and honestly with all that going on, I haven’t had the time nor the desire for much else. But alas, I feel I need to check in with you lovelies because even with all the stress and the crazy I know I need to stay positive and keep trucking on!

So with that being said what a great time to focus of the marvelous things that have been happening.

It seems most things that make me happy these days are food, beers and my love.

 Nothing wrong with that though right?

Matt and I had sushi plans with a friend who ended up canceling on us, bummer. Even though we re-scheduled for later in the week, Matt told me that he was craving sushi so bad that he still wanted to get some.  So we thought we would save money and meet at Whole Foods and just get sushi from there.

Well friends, I’m not sure we ended up saving money.

It’s not my fault, I was like a kid in a candy store with this selection. I think my eyes were bigger than my stomach and I got a bit carried away. And failed to look at the prices on top of that.

Yup friends, I spent $60 on sushi. Whoops. It was delicious though, so I guess it was worth it, but next time I think I’ll pay a little more attention to the price tags.  Matt and I were stuffed, but since we spent so much we forced ourselves to eat it. Tough life.

Two short days later we had our re-scheduled sushi date with our friend. You would think we would get sick of sushi, but we don’t.

We met at Sakana which we hadn’t been to in awhile and again forgot how huge their sushi rolls were and may have ordered a bit more than we should have.

We started with tuna tataki, which oh my goodness was amazing.

Yup. massive rolls. I think this is one of the few times we have not been able to finish everything we ordered.

I have never taken sushi to-go so when our waitress asked if we wanted a box I asked her if she personally had ever had left over sushi and if it keeps. She said she had, but only for the next day. I didn’t want to waste sushi so I decided to take it home and would just see if it was good the next day.

I had intentions of having it for lunch, but Matt’s parents come into town for an early Mother’s Day and we ended up having lunch with them at Olive Garden. Our service was less than stellar and I ended up taking some soup home with me from lunch.  It was still a great afternoon with Matt’s parents, as we took them to look at a possible wedding location. There was actally a wedding going on that day so it was great to see the spot set up for the occasion so we got a better idea of what it would look like. And it just made me super excited for my wedding!!

Since we were so busy through out the day, I was actually thankful for leftovers. I didn’t want to take the time to cook so it turned into a left over dinner kind of night.

One of Matt’s co-workers raved about an ice cream and insisted on buying us a pint. I have no idea why he was so passionate about it, but I’m not about to question anyone who is giving me free ice cream.

It was Black Raspberry Chocolate Chip and it was ah-mazing.

3. Mother’s Day Breakfast

Ok. So I’m not techincally a mom, but it doesn’t mean I can’t have a special breakfast on Mother’s Day right?

I didn’t think so.

So with it being Sunday and Mother’s Day, breakfast called for waffles.

I hope everyone had a wonderful weekend. Mine was nothing special as I worked all weekend, but it was an easy weekend so that is good, and I knew I had something to look forward to.

No school for a week! Woo-hoo! We get a week off for Thanksgiving which is great. I need the mental and physical break from it all!

That also means I’ll have more time to blog yay!

Part of me likes that I kind of put the blog on the back burner, but sometimes I really do miss doing it more often. So today to celebrate the lovely Katie’s Marvelous In My Monday, I thought I would do a quick little survey!

No surprise here. However I did a little spin on my powercake recently and started making them into bakes.

wiaw #29 – going green

Good morning loves.

First I want to apologize for being so MIA. Things have been really crazy around here.  I went back to Indiana last weekend to visit my grandma.  She has recently been diagnosed with cancer and recently started her chemotherapy. Why an 84 year old chose to do chemotherapy, I’ll never know, but I’ll keep my true opinions to myself.

If you follow my blog you know that my parents have been extremely un-supportive when it comes to my eating disorder and my recovery. I do believe my father told me that I’m 28 and I should just take responsibility for my problems, stop blaming others, and get on with my life. Then later admitted him and my mother had both had body image problems and obsessions while we were growing up. Yet they see no correlation between the two? Amazing. I never blame anyone for my eating disorder, what I try to explain is their personal body images issues influenced me as a child. I mean seriously. How could it not.

Anywho. Not my point. But the weekend was. Good? Good in the fact that I got to spend some quality time with my grandmother.  I bit my tongue when it came to my parents. And this somehow made my mother think we were okay and things were good again.  Another realization she is so out of it and just doesn’t get it.

I also got to spend some quality time with my friend Kimmie, who was so giving and let me stay at her house while I was visiting. This girl is seriously amazing and deserves her own post on how much she has supported me and showed me what a true friend really is. Unconditional love. She is amazing. Enough said.

I also got to see my sister, who just recently told me she is pregnant!! I am so excited to be an aunt and wish I could be closer, but I am super excited none the less!!

It was really great to be able to spend some time with her, and we had a real good conversation. I think she kind of “gets” it a little bit more with what is going on with me. I would never want to tarnish her relationship with my parents, but I also think she needs to be aware of what’s really going on and how they treat me. Because honestly, they are very very cruel to me.

But I’ve also been trying to stay real positive about things. I need to focus on me and getting better and if my parents do not want, or can’t, be a part of that right now, then they just simply won’t be in my life right now. Does that hurt? Of course. They’re my parents. But I’ve realized I need to do what’s best for me right now.

I also have started my vet tech classes again. So overwhelming. It is my sanitation and nutrition class and we actually do a lot of hands on with the animals at the school. A lot to learn in a short amount of time, but I am excited to actually be working with the animals.

But those are my excuses for being so absent, but I of course had to come around for What I Ate Wednesday.

Since I had not been home to really cook my meals, I thought I would showcase some of my favorite ways to cook and eat green foods.

Because let’s be real. I eat a lot.

I eat it oven roasted marinated with a little bit of braggs amino acids and a sprinkle of spices.

I eat it in stir fry’s.

And even raw in delicious fresh salads.

Ok, so it might not be girly to love beer.  But I do.

With my ED, drinking was something I gave up.

To “be healthy” right?

No. To cut calories.

Let’s be real, that’s why people with ED’s don’t drink beer. Especially us girls.

You can try and pull that “I just like to eat healthy” card, but I don’t buy it anymore.

You eat tons of veggies and don’t drink beer because you’re constantly thinking of calories.

Trust me. I know.

Anywho.  I have been on a huge beer kick lately.

Now my weight is still kind of low, so I definitely can’t drink as much as I use to, but Matt sure has taken full advantage of my beer adventures.  I swear I can’t walk into Whole Foods without walking out with a new beer.

I am definitely an impulse buyer and I will more than likely buy something if the container is pretty.

So my intentions for my Saturday post was going to be my trip to the farmers market, because I love that place. Yup. Didn’t take a single picture. I always forget.  I had a few other things on my mind at the time, but I want this to be a positive post, so we’ll just ignore those issues 🙂

On to the beer!

Matt has actually been great in taking pictures of his beer before he drinks them, so I wanted to highlight a few of our favorites.

you see what i'm talking about with pretty bottles/labels? i probably just thought this was cute. matt said it was very good though. win/win! (by the way if you are a beer drinker, i have not had a bad beer by odell brewing company. we love them.

Looks like Matt had some mac and cheese that night! Or maybe this was lunch. Who knows with us.  We have the motto it is never too early for a drink. Yup, we’re those kinds of people.

(Edit: I just saw the clock in the picture. Clearly it was dinner…unless it was breakfast. Ok we’re not those kind of people. Muahahah)

again another "ouu pretty bottle" moment. this beer again though was very good. and fun to drink! i la la love ipa's.

Again if you notice another Odell Brewing Company beer. Seriously can’t go wrong with this brewery.

this is another one of our favorite brewing company. new belgium. their most popular beer is fat tire. but their other specialty brews are ah-mazing. matt really enjoys the belgo. my favorite is none other than one of their other ipa's - ranger. delish.

New Belgium does an event called Tour de Fat. Their logo is a bicycle and they are real big on bike riding as opposed to driving, so there is a huge parade of bikes and the event is just ridiculous. People dressed up, music, beer. It’s a great time.  We missed it this year, but had gone to last years. So much fun. Look to see if it comes to your town and I highly recommend checking it out.

this was a beer i had seen multiple times in the store and had always wanted to buy it. i finally took the plunge. i love the places that let you do the create your own 6 pack because that way i get to try multiple new ones, and if you get a bad one, meh it was only one bottle and you don't have to worry about drinking a whole 6 pack. again, i really don't think matt would have a problem with that though.

I mean look at that cute little cow. This was very tasty.

And to stay on the milk stout topic and cute little animals on bottles, we had this guy one Sunday when we went out to watch the Colt’s lose game.

how could you say no to that cute little face. you can't. this is actually a local brewery and it was my first time drinking a milk stout. it was amazing. and again. just look at that face.

Another impulse buy were these guys.  We actually went to Whole Foods to get beer, but I was off wandering by myself and saw a guy unloading a crate…of gingerbread beer. Uh hello yes.

ok, so i'm not going to lie, i was kind of disappointed in the gingerbread beer. i was expecting a pretty spicy beer, but the flavor was kind of bland. oddly enough the warmer it got the more the spices came out, but who likes warm beer? i don't. the hibernation ale of the other hand though was amazing. so amazing we got it again.

Hello my loves!

Today has been quite a day!

So as a lot of you know today was my first day of school!!

(Read here about my decision to become a vet tech)

And other then the excitement/nervousness of starting school what happens on my way?

I get a flat tire. And I don’t mean a gradual flat tire, I mean my tire basically exploded.  I have never had a flat tire. So of course of all days, my first day of school, I get a flat tire.

Thank God that I am so nervous that I had left incredibly early, and then even a little earlier because I wanted to stop at Starbucks on my way to school(which unfortunately didn’t get to happen) I was so scared because they have a very strict attendance policy and I didn’t want to make a bad first impression, but I had a guardian angel watching over me, because literally seconds after I pulled off a car pulled in and asked me if I needed help.  I quickly said yes and this guy came over with his own jack and changed my tire in probably 15 minutes or less. I couldn’t believe it.  I was so thankful (ps. this guy barely spoke English) and tried to give him some money and a hug, but he really wasn’t having it.  Truly just a good Samaritan. So all things worked out and I still ended up getting to school early.  This seriously happened on the worst of days, but I surprisingly handled it well and it all worked out.  I really can’t thank that kindness of that man enough.

But I made it! And it’s official.

got my schedule today! i'm officially a student!

Oh.My.Gosh. I am only taking one class at a time (that’s how they offer it) But take a look at this book load.

there is actually 2 more books to add to this stack that we hadn't received yet.

Matt and I had contemplated whether or not I should get an actually backpack or if my shoulder bag would suffice. I quickly sent him this picture and told him I was pretty sure I would need a backpack! Seriously a great arm workout carrying these bad boys around.

It is a lot of information in a very short period of time, but I am so excited. I am finally doing something I am passionate about!

Today ended up being a very long day too! I had to stop in financial aid to finish some things up and ended up actually not being able to do a lot of it, but ended up staying out because I had a therapy session later in the day and having that spare on I didn’t want to do a lot of driving.  So I ended up heading over early and just read in my car until it was time.  And trust me. I have plenty to read.  Matt came and got my car while I was at my appointment and took it to get fixed.  Love that kid.  I guess all my tires were in pretty bad shape so he ended up getting them all changed.  I seriously am so blessed.  As of late I have really come to appreciate all the good people I have in my life and I am thankful to have quite a few.  Matt being my #1 fan.  His parents being super supportive of my decision to go back to school. And all of my true friends who have been generally concerned and involved in my life. It is incredibly humbling and I couldn’t be more thankful.

after i got home from my walk matt had actually already left for work, but i found this waiting for me on our chair right inside the door! (this picture was actually taken inside my bag. i took it with me and took a little peek before class started to calm me down. instant smile.)

On our way home from my appointment I texted Matt and told him to meet me at our Whole Foods.  I wanted to get him a little treat for being so helpful today.  I let him pick it out 🙂

is anyone surprised he picked beer? i'm not. although that was my intention. i was going to surprise him, but i figured it might be nice to let him pick out what he wanted.

Then dinner was a quick leftover bean “quesadilla”.  No cheese of course with added pumpkin.  I know beans, pumpkin, together?  It’s amazing. Trust me.  Sprinkle some cinnamon in there and you will be in love.

a nice quick little dinner. thank goodness for left overs sometimes!

and i have been obsessed with salsa lately. found a really good bean and corn one at whole foods and have been in love. i know it's just salsa. don't judge me. i get excited over little things.

Seriously guys I don’t think I will ever get sick of pumpkin. I mean seriously. We all know I’ve been a little pumpkin crazy lately.

I was so excited today I even treated myself with a little bit of this.

progress sure is tasty. this stuff is seriously to die for. so good.

 I am so glad I am able to treat myself once in awhile. It feels good to be somewhat normal again and not freak out after eating a little bit of ice cream.

Well loves, I must say I am going to be insanely more busy, so I don’t know if I will be posting as often.  I also have some other issues going on that I want to address, but this post is all about positivity and positive changes so we’re going to keep it that way!
