Hi friends.

I know it’s been awhile, but my life lately always seems to be go go go.

I really feel like I barely get the chance to sit down and just relax, but honestly, sometimes I don’t know that I would want a lot of spare time. Friends, Hello!!

I know it has been quite a while and I hope you have not forgotten about me, I have not forgotten about you! I really have missed writing this blog and am sad that I have not been more consistent with it. I think you all know that life just happens, we get busy, and time slips away from us. I mean, can you believe it is already October?? I have been doing a lot of thinking, goal setting and am really trying to start doing things that better serve me and my interests and passions. But me and my scatter brain hopping from one thing to another, sometimes time and tasks just get away from me.  In the future I really hope to start providing you with quality information and topics, not just my random life happenings. Although sometimes random life happenings are just as interesting to read about!

With that being said, I come to you today with random life happenings! But such a happy one that I just had to share.

I currently am on a plane right now coming back from Indiana where Matt and I attended our good friends Louis and Claire wedding reception. They are friends of ours that we had went to college with in Indiana, then sort of followed out to Arizona. It was one of those trips that I feel like we traveled more than we visited, but we wouldn’t have missed this day for the world. It is always good to go back and see old friends and celebrate such important events with those we love.

Their ceremony was on Saturday and family only, so we booked our flight for Saturday morning so we had one night to spend in Indianapolis before heading down to Southern Indiana where the reception was on Sunday. If you fly you know all the cheap flights are bright and early, so we booked the earliest flight to give us some time to settle into a hotel and have some dinner, there was a 3 hour time difference so even though we flew out at 7am, we “arrived” at 3pm. But even with an early flight we made time to hit up our favorite Dutch Brother’s for a coffee to start our trip.

You know you’re a regular when instead of going to the walk up window at 6:30am like your normally do, but go through the drive thru at 5:30am, and get the immediate response of “what are you doing in the drive thru and why are you so early???” from the staff. This is one reason why Matt and I go to Dutch Brother’s every morning. Yes I may be addicted to their coffee, but it’s the experience that we get. They really take the effort to get to know you and truly start our days off on a positive note. They alway’s put us in good moods, and at 5:30am, we needed that!

With out coffee’s in hand we were off to the airport! And of course as soon we get there airport selfies were to be had.

Matt for some reason loves to drink on the plane, and even though we had a short flight to Las Vegas for a short layover, he insisted on getting a drink, that we both had to chug immediately.

 One thing I insisted on doing at the Las Vegas airport was play a slot machine. And even though we were almost late to board our plane, I think it was worth it!

We landed in Indianapolis and went off to find a hotel. Matt thought it would be fun and spontaneous to not pre-book a room, and little did we know that there was some sort of racing event and high school sports team competitions going on, so a lot of the hotels were booked or only had one or two rooms available. We thankfully found one with not much trouble, checked in and headed out to find somewhere to eat. We drove around our old neighborhood, and was amazed at how much it’s changed and hadn’t changed all at the same time. Since we were both pretty hungry instead of driving aimlessly around we of course just settled for something we both love. Sushi.

In hindsight and driving around later there were probably so many better choices and new places we could have checked out, but you know when you’re hungry and everything and nothing sounds good at the same time? That’s where we were at. Sushi usually doesn’t disappoint.

It wasn’t bad, but it definitely wasn’t the best sushi I have ever had.

After dinner we had plans to meet up with one of our friends who recently opened up his own brewery called Big Lug Canteen. He is the head brewer, so we were really excited to taste the beers and catch up. Since the last time we had seen them, the couple had gotten married and had a kid, so it had been quite awhile.

The beer and food were both amazing and so was the company. It was so great to hang out with them and catch up. We ended up talking for over 3 hours before we all knew it! They had to get home to their son and Matt and I were both exhausted from the trip and were ready to settle in for the night.

Even when I’m on vacation or on a trip I always seem to get up early. It doesn’t matter the time zone, time difference, the type of trip. I get up early. While Matt continued to snore away, I decided to find the hotel gym. I’m following a new program, but didn’t have a portable DVD player so I just kind of winged it. One thing I love about having completed a few programs, I have favorite moves that I know work me. So even though this hotel gym only had a few treadmills and minimal free weights. I made it work.

And was a pretty sweaty mess by the end of it!

I headed back to the room where Matt had finally woken up. Our hotel actually had a decent continental breakfast, but we wanted to explore some more, so we headed to a really fun looking restaurant that served more local fresh ingredients called The Garden Table.

I had looked at the menu before we went and was pretty set on getting an Acai Bowl, but upon walking in and chatting with the friendly staff, they highly recommended the two salmon specials they had. One was a smoked salmon on house made sprouted bread with cream cheese and the other was a poke salmon with thai inspired kimchi and bok choy. Both sounded delicious and the couple sitting next to us actually had ordered both and raved about them. A staff member was taking his break and had ordered the smoked salmon and showed me how it was plated, so I decided to branch out and try that.

I was a bit nervous, I usually don’t do these savory type of breakfasts, but oh my gosh it did not disappoint.

The salmon was ah-mazing. Absolutely cooked and seasoned to perfection.

I was beyond happy with my choice and so glad I decided to branch out.

Before leaving town I wanted to stop by a local doggy bakery that I use to go to quite often for cookies and treats for Delilah. I swear these treats look good enough to eat myself!

After we grabbed the dogs some doggy donuts we headed down to the wedding fun!

And it was sooo much fun. It was nice to catch up with old friends at the reception and then head to Louis’ parents for a cook out and campfire. Even though it was a busy short trip, we wouldn’t have missed it for the world and had an amazing time celebrating with our friends.

I love to cook don’t get me wrong.  But I am not going to lie. I have been WAY too busy lately to have the time to make myself gourmet, made from scratch meals. You guys know this. And I am sure a lot of you can relate.

Sometimes you just have to rely on pre-made items to help you when your in a time crunch.

I do my best to food prep on the week: pre-chop my veggies, cook up a grain, whatever I can to make dinner time preparation go by quicker. But when it comes to proteins, well those can be time consuming.

There are the times when pre-cooked meats are an awesome convenience, but if I am going to use these, I want to make sure they are the best quality. That is why when al fresco asked me to review some of their products, I didn’t hesitate to say yes. The fact that these products are all natural and made from quality ingredients, I knew that these would be a great addition to a meal.

I typically stay away from pork bacon, so I was very excited to try this out.

I was trying to think of what might be a good pairing, and remembered that a client had given me a jar of authentic pasta sauce from Italy. I know authentic sauces don’t typically have too many seasonings in them, so I thought the smokiness of the sausage would be a good compliment.

It’s way to hot to be grilling outside here in Phoenix, so we decided to use our indoor grill to heat up the sausages.

I mixed everything together and a delicious dinner was put together in no time.

I was right in that the sausage added just the right amount of flavor to the pasta.

And this meal couldn’t have been more simple to make.

All you need is your favorite pasta, a jar of your favorite pasta sauce and al fresco pre-cooked sausage.

The great thing is there are many different flavors of sausage to choose from. So whatever mood you’re in, there a flavor.

I am not going to lie, I am not usually a huge sausage fan of any variety, but I truly really enjoyed these sausages. I am very eager to try the other flavors and varieties!

I find the older we get, the more we forget to do the things we love and that bring us joy.

We “never have time”. But really, I think we can make time.

Camping was one of these things for me. I LOVE camping, yet I could never find the time to take a weekend to go. Now in reality, I do work every weekend, and it is hard for me to get a Saturday off, we are very short staffed at my clinic, so really getting a Saturday off is a lot to ask. But what I found out, it doesn’t hurt to ask, because you never know, your boss may be in a good mood and grant your request.

This was the case when I decided to request off a Saturday. It got approved! Matt and I immediately knew we wanted to go camping before it got too hot. So camping we went!

Matt was so excited that he took Friday off so he could go early to make sure we had a campsite. I felt kind of bad for him, it must have been pretty boring out at a campsite by yourself. Well he wasn’t completely alone. He seemed to have some entertaining neighbors to people watch during the day…he then had Jack Daniels to keep him company at night. 😉

Saturday morning I made my way up to meet him. Upon arriving we had a quick lunch and headed off to the lake to do some fishing. The view was beautiful. I always forget how much I miss the water and trees.

So while Matt did some (unsuccessful) fishing. I found myself a seat on a rock, read my book, and got in some sun.

It was beautiful. I seriously forget how nice it is to just be outside in nature.

On our way back to the campsite we stopped by one of the view points and just sat some more and took in the view.

When we got back to the campsite, we started our dinner fire and made a very fancy dinner.

Nothing fancier than foil pack veggies and potatoes and hotdogs. Really. What is camping with out roasting some hot dogs over the fire? It’s not camping.

I know s’mores are a traditional campfire (side note: I totally asked Matt to get s’mores ingredients and he forgot…) But a campfire dessert tradition for his family are “pudgy pies”. They even have pudgy pie makers that are made to put over a campfire.  A pudgy pie is basically just buttered bread with pie filling in the middle, put in these cast iron holders and put in the camp fire coals until crispy. Think grilled cheese, but with pie filling.

(edit: in looking up a simple recipe link, I just now discovered ALL the possibilities of pudgy pie fillings. I didn’t even know there were so many different ways to make them!)

It was too dark to take a picture, I really wish I got a picture of the burnt to a char first batch Matt made, but trust me the second round turned out delicious.

The next morning Matt and I went for an early hike. We ended up seeing some deer and had a little squirrel tour guide for awhile (no joke a squirrel led the way down the trail and walked with us for a good half mile)

More reading on the rim happened. We took our chairs this time and just hung out under some trees for shade.

The breeze was perfect and the view was beautiful.

Then before we packed up the campsite, we headed down to the lake and rented some kayaks for an hour and just tooled around the lake. Again, it was just so nice to be out of the water and take in nature. We literally just floated and took in the scenery. We were both so at peace and happy we didn’t even need to talk.

Then it was back to the hot city for us. We really picked the perfect weekend to go because the temperatures in the valley that weekend hit a high of 117 degrees!!

Camping was bittersweet, it was so great to get away for a few days, but at the same time it made me want to do it more often. But I now know it doesn’t hurt to ask for a Saturday off, and who knows, maybe they’ll be granted more often.

Hi Friends.

Yes I am still alive. I am so stretched thin with all the work I try to fit into the few hours I have outside of my day job, but a goal I am trying to enforce is staying true to my power hour goal. Matt and I try to set an hour to work, but I feel my hour is so unorganized that I really do not accomplish much. So I am going to try and set a schedule for myself, and part of that will be dedicating more time to my blog. I don’t want it to be just a random check in and photo dump, I want to be able to provide more useful content and have this blog have meaning again. So for those of you who have stuck with me, know I am going to make more of an effort to get you more beneficial information!

But that is in the future, for now let’s play catch up on some fun happenings. A lot has happened.

The new house is slowly but surely coming along. Matt and I are really loving the house and as I mentioned before we are so blessed to have amazing neighbors and have clicked well and fast with some of the younger couples.

One couple invited us out to Happy Hour at a place they frequented often. Well, we must have gotten the B crew, because service was sub par. It was actually quite horrible. But it almost made the night more fun because all we could do was make light of the situation.

At least we had good company.

On my days off, I’ll sometimes meet Matt for a drink. We found a really neat taco place that has great happy hour specials. And who doesn’t love a good margarita?

And sometimes when I have a stressful day at work, A drink with my husband makes everything better.

Hello my loves!

Once again I apologize for my absence, but from my last post I think you can understand that I have a lot going on. But that really does not excuse my lack of keeping you all up to speed on what’s going on. I really do love this blog and sharing my life with you all, and now that things are starting to settle I promise I will make more frequent appearances. But since it has been so long, I thought a photo dump of a post might be in order. That way I won’t waste your time with a lot of words, but fill you in with pictures.

I know Easter was a while ago, but I really have to note how incredibly amazing our new neighbors are. All of them have been so welcoming and I think the second day we moved in we came home to this welcome basket. This was the first sign that they were amazingly welcoming, but since then they have proved it even more.

We know how incredibly lucky we are to have such kind neighbors, it’s seriously a rarity in this city. So the fact that our street is such a little tight knit community it icing to the cake on our amazing house!

Next Sunday we found a really cute coffee shop that was more in our neighborhood.

This place had such a cool vibe and had a lot to offer. But per tradition, we stuck with Bloody Mary’s and biscuits and gravy.

When we ordered the Bloody Mary from the bartender, she informed us their recipe had 18 ingredients and it would take her a few minutes to make it.

Totally worth the wait. This was one of the best Bloody Mary’s I have had. And I’m not even that big of a fan of Bloody Mary’s.

Matt again chose to get chorizo with his biscuits and gravy, again delicious. And their iced Americano’s where amazing as well.

I have a feeling we will be frequenting this place often.

Even though our old spot was a bit dingy, and maybe not the most fancy set up, I will say I miss their biscuits and gravy the most. And the atmosphere. It’s nice being a regular, so it was always nice to get such a warm welcome when we walked in. Not to say we can’t establish that else where, but for the moment.. the feeling is missed.

We have been exploring for more than just biscuits and gravy.

Yes I think it’s safe to say we have been exploring our new neighborhood.

The house is slowly but surely coming along. Matt and I are both so excited to make it our own, but I can tell you…it already feels like home.

Ok, let’s be real, I have been waiting forever to spill this news and I officially can!

Matt and I are officially homeowners!!

Yes friends, we bought our very first house! I know a lot of people say their first time home buying process is stressful and horrible, but other than one small snag (seller scratched the floor while moving out) our home buying experience was smooth and easy.

I would like to thank our amazing realtors for being a huge part in that. They were such a pleasure to work with.

I also think good karma finally came back to Matt and I. I always say being a good person, even if you get sh*t on in the process, is always worth it and the right thing to do. And I truly feel that all the times Matt and I got taken for granted and all we’ve done for others, finally came back to us. And I couldn’t be more thankful for that.

SOOO excited to get moved in and make the house our own. I have about 93849234 projects I already want to start. Someone needs to remind me that these things take time and I need to do one project at a time. I have a feeling I may bite off more than I can chew. But I’m just so excited!

So needless to say we have been insanely busy. Packing, signing documents, loans, walk throughs. But alas, we still find time to do some normal fun things!

Since we’re moving out of our current neighborhood we have really been taking advantage of some of our local spots that we love.

I am REALLY going to miss our Sunday morning breakfast tradition at Buzz Berry. We go here every Sunday as they have the best biscuits and gravy. And we’ve really gotten to know and love the staff. They are so good to us, so much that one day when they forgot to make said biscuits and gravy, we got a complimentary coffee cake to tide us over while we waited.

Another tradition I am going to miss is on my day’s off Matt and I go to a local coffee shop Comoncy that is right by Matt’s work. Again we have gotten to know the staff and always have a great morning together.

But the one thing I think I will miss the most… my favorite sushi restaurant. Not only do they make the best sushi I have found, but yet again, we have gotten to know the sushi chef’s and are always treated so well. When it comes to dining out the experience is just as important as the food. Luckily we get the best of both.

But even though we are leaving some pretty amazing places behind, we have been exploring our new neighborhood which has some pretty neat places that soon may be our new regular go to spots.

We have been having a lot of fun out in the world exploring, but there has actually been some delicious-ness going on at home too.

I can’t say I’ve been cooking gourmet meals by any means, but I did whip up some amazing chicken tacos one night.

I definitely took a short cut and used rotisserie chicken and just added a can of Rotel tomatoes and let it simmer and marinate. Put in purple corn tortillas and topped with allll the avocado.

And since we are trying to save some money, being new home owners and all, I attempted to make my own veggies rolls at home instead of stopping by Whole Foods.

Mine were a bit messier, and I swear what makes these amazing is the wasabi-mayo sauce that Whole Foods gives with it (thankfully when I go I grab extra’s so I had some at home) so they were a pretty good substitute.

However, the nights Matt plays dodgeball and I know I am having dinner alone…sometimes I can’t help but pick up sashimi on my way home from work.

AJ’s Fine Food salmon sashimi is seriously the best I have ever had. And I am picky when it comes to my salmon.

It’s like buttah.

Well loves, I would love to stay and chat, but I have an apartment to pack up!!

Moving is so bittersweet. I hate packing, but am so excited to get into the new house and make it my own. But seriously the whole process..packing/unpacking, I could do without.
