Oh loves do I have some fun things for you today!

First a little disclaimer: In this post I will be talking to you today about coffee alternatives, I know there is a lot of debate on if coffee is or is not good for our health and I will say that I still consume coffee, but I think it is important to know the facts on both sides and then you can make your own decision on if you want it to be a part of your diet or not.  Coffee works for me, however I do like to limit the amount I consume, so I think coffee alternatives are great!  Especially when they are delicious!

One of my personal favorite drinks is a Chai Latte and I recently discovered you can order this drink dirty, which would typically include espresso. Well to my pleasant surprise, Jessica has a recipe for this!

"Dirty" Chai Latte

Ingredients

  • 6oz brewed herbal "coffee"
  • 6oz brewed herbal chai tea
  • 1/4 - 1/2 cup cream or milk of your choice
  • 1-2 tsp honey or maple syrup
  • 1/2 tsp vanilla extract

Instructions

  1. In a small saucepan, heat your coffee, chai, and milk until hot.
  2. Whisk in your honey or maple syrup until dissolved.
  3. Remove from heat and add vanilla extract. Whisk until combined.
  4. Pour into your favorite mug and enjoy!

recent happenings

Hi loves!

As per usual things have been busy busy busy over here. As busy as I feel my daily life is, I still feel like there is so much more I want and need to do. There really needs to be more hours in the day, don’t you agree?
I did want to pop in, say hello, and share some recent happenings.

I told you all that Matt and I recently went back to Indiana to have a wedding shower with some friends and family that were not able to make it out to Arizona for the wedding.

It seemed just like the wedding, too many people, not enough time, but it was so wonderful to see and connect with friends and family we haven’t seen in awhile.

Our adventure started at the new airport shuttle. It’s a new air tram and Matt and I were pretty excited about it.

When we got to the airport we had our traditional pre-flight drink

We always have one, mainly because we are those people that get to the airport two hours early and always have some extra time to kill.

I usually get a mimosa since our flights are typically pretty early, but we took a little bit of a later flight, so I got a delicious looking cocktail.

It was vodka mixed with pink lemonade, there may have been something else in it, but I don’t remember. Regardless, it was delicious.

We soon were in Indiana and the craziness began!

We flew in Friday and the shower wasn’t until Sunday. My sister was actually staying at my parent’s as well, as they were having work done on their roof, so they didn’t want to be around all the loud noises with the kids. It was so much fun having us all in the house and it meant extra time for Matt and I with our nieces!

Saturday my sister had plans to take the girls to the zoo and asked if we wanted to tag along. Um, yes please! 1. I love the zoo and 2. more time with my sister and nieces!

Because I honestly can’t get enough of these cuties!

It was a hot one, so we lasted as long as we could. Honestly I think the adults were worn out before the kids were!

The next day was the shower and it was a busy one, but so much fun!

I have very few friends who I keep in close contact with from back home, but those are the best ones and man did I miss them!

So as mentioned, the shower was so much fun, but again I really wish I had more time to catch up with friends and family, but at the same time was so grateful for the time I did have. We were so humbled with not only all the people who attended, but also the generosity. Everyone was so great in helping make the day run smooth and one thing to note was my neighbors (who I really do not know well) not only made delicious mason jar desserts, but made us crafty photo frames using our wedding photographs.

I am always in awe of those who are super crafty as I wish I was.  The photo frames she made for us are absolutely beautiful and we are so excited to show case them in our home.

And as quickly as we came it was time to go home. That morning Matt and I were able to escape away for breakfast together.  My dad had to work and my mom was in operation clean up mode, but it was actually nice for Matt and I to spend some quiet time together.  It also reminded me a few reasons why I miss Indiana. It is insanely hot here in Arizona and it was so nice to be able to sit on a patio, surrounded by trees and enjoy a quiet breakfast.

The food was also amazing.

We went to a local breakfast place and both started with fresh squeezed orange juice. I got the most amazing biscuits and gravy and even though they did not photograph well, they were absolutely phenomenal. The part that made them extra amazing was they toasted the biscuits before topping them with gravy. Life changing.  Matt got a mexican potato skillet that was also delicious. Of course I stole a few bites. Home cooking at it’s finest!

Too soon it was time to pack up and head to the airport. And as per usual Matt and I were incredibly early, so you guessed it. A pre-flight drink was had.

Upon returning home there was something else to celebrate, Matt and I’s 3 month anniversary. Yes we’re still celebrating the months.  Really just a reason for us to go out to dinner.

I love us…

All three months we have been celebrating with the same dinner.

Sushi.

And guess who isn’t complaining.

When we do celebratory dinners we typically go all out.

We started with fried gyoza and typically I am not a huge fan, but these were absolutely delicious.

Again, not typically a fan of the fried rolls, but I’m convinced anything covered in eel sauce is delicious.

And it was.

So overall even though incredibly busy, we’ve had an amazing couple of weeks. We are so blessed to be surrounded by such amazing people and continuously are reminded of all the love we have in our lives.

chocolate protein pudding

Hi loves. Where have I been?? I don’t even know.

I do apologize for the lack of posting and MIA status, but there has just been so much going on. Matt and I went back to Indiana last weekend for a wedding shower that my mom had for us to celebrate with some of the friends and family in Indiana that couldn’t make it out to Arizona for the wedding. Visits home are always bittersweet because it seems like there is just never enough time.  Isn’t that how it always is?  I will do a little re-cap of my visit home later, but I will say it was so lovely to see friends and family that I have not seen in a long time.

Today I bring you a little tasty treat though. Its also been a hot minute since I’ve posted a recipe it seems, and I have a fun, easy and delicious one to share with you today.

If you know me at all you know I love my protein powders. If you really know me, you also know my obsession with Growing Naturals Pea Protein. Their vanilla blast seriously holds a special place in my protein heart.

So imagine my delight and excitement when I found out they were coming out with a chocolate flavor of the pea protein. Life Changing. It may actually be kind of pathetic how excited I was.

My favorite thing to actually do with their pea proteins is to make a simple protein frosting, but when I got the chocolate I wanted to have a little fun with it.

Since I’ve been on a bit of a dairy break and not able to enjoy my delicious frozen yogurt as often, I have been experimenting which new desserts, because I seriously have to have something sweet at the end of the night. I had made a tofu pudding in the past and since I love the creaminess the pea protein adds to most mixes, I thought it would be a perfect combination.

It was.

 Adding in Enjoy Life mini chips didn’t hurt either.

I took my base recipe for the tofu pudding and then added in about 2 tablespoons of the Growing Naturals Chocolate Pea Protein.

I put the tofu pudding in the freezer after mixed for about 10-15 minutes hoping it would make it more of an ice cream texture, it ended up more like frozen yogurt which was perfect to me!

Which did I mention it tasted amazing? Because it did.

The combination of the silken tofu and pea protein was just a beautiful creamy dessert.

Chocolate Protein Tofu Pudding

Ingredients:

– 1/2 block silken tofu

– 2 tablespoon unsweetened cocoa

– 2 tablespoons chocolate pea protein (I used Growing Naturals)

* optional 1 teaspoon NuNaturals Cocoa Syrup

Directions:
-Place all ingredients in a small blender and blend until smooth.

You may need to add a liquid if too thick, but you want the consistency to be smooth and creamy.

I hope everyone has a wonderful fourth of July weekend and got some time off to relax and enjoy time with friends and family! We only had a half day on Friday and are closed for Saturday for the 4th, so I am taking advantage of my extra time off. Wish I could say I am doing a lot of productive chores, but that never seems to be the case with me.

So I thought since I had some extra time I would do a What I Am Loving Lately post.

With it being the holiday’s and grilling season (however not really for us in our 115 degree weather) I love seeing all summer time recipes floating around.

I must admit Monday’s are not my favorite day, but sometimes the little things can make this day a little bit more manageable [and marvelous].

Like donuts. Yes I think donuts make Monday’s a bit better.

Especially when they require few ingredients, are grain free, egg free and incredibly easy to make.

I am very excited to finally share this recipe with you. I posted a few teaser pictures on Instagram and many of you were very curious to know the recipe, maybe because there is a very unique ingredient.

Remember the tigernuts I reviewed in my last post? Well there is also tigernut flour, and I was so excited to experiment with it as just as the tigernuts are a great nut free snack, the flour is great for nut free gluten free baking.

So when I went to start thinking about what I wanted to experiment with first, I remembered a post I had recently seen by the lovely ladies over at Purely Twins.  They are to blame thank for my obsession with plantains and I had seen a recipe they posted using my beloved plantains and tigernut flour. How lucky.

I did tweak the recipe a little bit, but not much considering there are so very few ingredients, but I tend to like my baked goods a little sweeter so I added in some sweetener and of course had to use my absolute favorite pea protein for the protein frosting.

Seriously guys. Growing Naturals vanilla blast pea protein makes the best protein frosting.


 Plantain Tigernut Donuts

Serves 1-2

Ingredients for Donuts:

– 6-7oz peeled plantain

– 5 tablespoons tigernut flour

– 2 tablespoons coconut oil – semi solid

– 1 teaspoon baking powder

– 2 tablespoons maple syrup (may sub honey)

Ingredients for Protein Frosting:

– 3 tablespoons protein powder (I used Growing Naturals vanilla blast pea protein)

– 4-5 tablespoons water

– a few drops of stevia if desired

Directions for Donuts:

– Peel plantain and measure 6-7oz – chop plantain into approximately 1″ chunks and place in blender with coconut oil – puree until a smooth batter.

– Add in tigernut flour and baking power and continue to blend until smooth. You may need to add water to make smooth – add 1 tablespoon at a time. Scrap down sides as needed.

– Lightly grease your donut pan and place batter into molds. I have a mini donut pan and got 3 donuts out of the batter.

– Bake at 350 degrees for 13-15 minutes.

While the donuts are cooling, make your protein frosting.

Directions for Protein Frosting:

– Mix together protein powder, water and stevia if using. May need to add more water until desired consistency is reached.

Once the donuts are cooled top with your protein frosting.

You may also sprinkle with any additional toppings that strikes your fancy. Granola, chocolate chips, coconut shreds are all great options.

These can be enjoyed warm straight from the oven, warmed up in the microwave or toaster oven or even cold from the refrigerator.  They last about 3-4 days in a tightly sealed container.

I was so pleased with how these donuts turned out. I love baking with plantains and love the flavor they give to baked goods, but as mentioned above if you do want a more sweeter donut it is so easy to add and adjust the flavor.

Speaking of adjusting the flavor, I do believe a chocolate version is in my near future. Because when I decided to top my last donut with a drizzle of a cocoa drizzle, I knew a chocolate donut would be just divine.

tigernuts; an ancient superfood

The more weird a food looks or sounds, the more I want to try it.

I swear I am one of those people who walk around the grocery store produce aisles or the local farmers market and if I see a fruit of vegetable that I have never heard of, I want to try it. I am truly one of those I will try anything once people.

I think this is a great thing, I have discovered so many amazing foods this way.

So of course when I saw these little things called Tigernuts, I had to find out more.

So what are tigernuts?

Tigernuts are not even nuts, they’re considered a vegetable! They are great for people who have nut allergies and are looking for a nut free and gluten free option. They are an ancient superfood that originated in Northern Africa and have a great nutritional value.  According to the African Journal of Food, Agriculture, Nutrition and Development “tigernuts have long been recognized for their health benefits as they have a high content of soluble glucose and oleic acid, along with high energy content (starch, fats, sugars and proteins), they are rich in minerals such as phosphorous and potassium, calcium, magnesium and iron necessary for bones, tissue repair, muscles, the blood stream and for body growth and development and rich in vitamins E and C”.   There are so many more health benefits to these small little vegetables, check out this great post by The Organic Dietician to learn more!

So what do they taste like? I thought they tasted like a raw almond with a little bit of sweetness and the creaminess of a cashew with a bit of a chew to them.

what i’m loving lately

Hey loves.

I know I have mentioned it briefly on here about Matt’s mom’s recent health issues, but it’s been awhile since I’ve given an update. Long story short, Matt’s mom has a history of an auto-immune disorder, it’s something she has been on medication for, for a really long time. Honestly, I think since I’ve been with Matt, so at least 9 years.  As most of you I’m sure know, a prolonged use of steroids and medications are horrible for your gastrointestinal tract. She had a surgery where she had part of her GI tract removed, but recovered quite well from that. Right around our wedding though things started getting bad again. She was having bad reactions to certain foods and soon was not able to keep any food down without vomiting. I’m talking she probably went a good month of this, not being able to eat and vomiting everything she attempted to eat. That is a long time to be with out nutrition. What was even more frustrating was her local hospital was doing nothing to figure out what was going on. Basically if one medication wasn’t working they would just try and put her on another one. Which caused another set of problems where she basically was displaying symptoms of Alzheimer’s. It was heart breaking to watch, especially since we had no idea what was wrong or any way to fix it. We finally convinced her to transfer to a hospital in Tuscon, AZ where she was able to get more specialized care.  Fast forward, she is doing much better. As imagined though she lost almost all of her muscle and strength during her bout of malnutrition, but I am happy to report she is on the mend.

The reason I bring this is up is Matt has actually been up with his mom taking care of her for the past week.  His dad had a retreat to attend that he had planned long before Matt’s mom had gotten ill.  And being the amazing son Matt is, he took a week to go up there to be with her and help her.  Lucky for him he can work remotely as he does web design, I however am not that lucky and could not join him.  Needless to say I have been very lonely (and bored) without him.

So what better time to do a what I’m loving lately post.

I’m not loving Matt being gone, but I am loving that since I can’t actually see him and be with him, I am sending him multiple pictures through out my day to keep him up to date.

Cause I know he cares when I’m drinking my coffee, driving to work (tired and super happy about it), giving a dog a bath and getting waffle mix for my co-workers.
